My Secret Granola

Okay, okay, so i've finally cracked and decided to give away my secret granola recipe for all of you to enjoy.  Some things are just too good to keep secret.  This has been my fuel all summer.  Top with fresh summer fruit and plain yogurt for breakfast and you'll be in heaven.

6 cups old fashioned oats
2 cups buckwheat whole grain
1 cup chopped almonds
1 cup coconut
1 cup pumpkin seeds
1/2 cup hemp hearts
1/2 cup flax seeds

2/3 cup honey
2 tbls agave nectar
1 tbls vanilla
1 tbls fresh lemon
pinch of lemon rinds

1 cup goji berries
1 cup dried blueberries

Preheat the oven to 300 F.  In a large bowl, combine all dry ingredients, except for the dried fruit.  Combine honey, agave nectar and vanila in a small saucepan and bring to a mild simmer.  Remove from heat and add the lemon.  Toss liquid and dry mixture together and spread onto 2 greased (coconut oil is great for this)  cookie sheets.  Bake at 300 F for 30 minutes, then add dried fruit at the end.

It is really easy to substitute ingredients to add some of your favorites, but just make sure the ratios stay the same between wet and dry ingredients.

Enjoy!
